Chipotle Lime Ranch Dressing

Does your family love ranch dressing? Mine does. This recipe gives regular old ranch a new kick! We love to use it on Shrimp Tacos, or taco salad, it’s even great as a dip for potato or tortilla chips. The chipotle peppers give it a spicey, smokey flavor that begs to be put on any Southwestern, TexMex or Mexican dish! Trust me, once you make this, you’re going to be racking your brain to use it on everything! It’s that good!! Let’s get started!

1 cup Plain Greek Yogurt
1 cup mayonnaise
2 cloves garlic, minced or use a garlic press
1-3 chipotle peppers, minced
3 tablespoons cilantro, chopped, here’s a great tool for chopping herbs, a curved blade salad chopper
2 tablespoons diced onion
1 lime, juice and zest, here’s a great citrus squeezer
1 tsp kosher salt
1 dash cayenne pepper

Combine all ingredients well, refrigerate for 1 hour before using to let the flavors come together. Serve on Shrimp Tacos, Taco Salad, Southwestern Chicken Salad or use as a chip or veggie dip.
